New takes on vegetables among Waitrose's food trends for 2016

Vegetable offcuts, sprouting seeds and vegetable smoothies are among the food trends to look out for in 2016, according to supermarket Waitrose.

Its "executive chef" Jonathan Moore said: "Stem-to-root cooking is predicted to be big, as it has been in other countries. It's the kind of cooking that turns leftovers into tasty dishes."

Carrot tops and beetroot leaves make garnishes for soups, while washed peelings of parsnips, potatoes and other veg "are perfect for frying for crisps", he said.

Popularised by cooks including Yotam Ottolenghi, sprouting seeds are a popular addition to salads and stir fries or even eaten raw, and Waitrose will be launching a seed sprouter kit (pictured) shortly.

Popularised in the recent Great British Bake Off, dried physalis or "goldenberries" from South America are also set to gain in popularity as a nutritious snack and ingredient.

Waitrose has also launched vegetable smoothie mixes, including a "Gorgeous Green" of spinach, kale, mango and kiwi, each yielding a 150 ml drink that counts as aone of the recommended five-a-day portions.

Waitrose nutrition manager Moira Howie added: "Nutrition will continue to grow - it's where modern Britain is. The key thing is what you do with the information," pointing out that almost half of the top 25 Instagram food hashtags concern healthy eating.
