The company repurposes redundant underground spaces to produce leafy greens and micro-herbs using LEDs and hydroponics. Its board comprises celebrity chef Michel Roux Jr, Florette managing director Neil Sanderson, HSBC director Glen Fernandes and sustainability pioneer Ed Gillespie.
Roux said: "There's a growing demand for sustainable, locally-grown produce in London. The market for this is huge."
The start-up opened a 1ha growing facility in a former air-raid shelter last year. The produce is distributed to the catering trade by County Supplies London.
